This is
the Sardinian cold meat par excellence, produced all
over the island. It is made from choice fresh pork
meat, cut into small cubes with the addition of fat
and salt. Spices (few and sometimes marinaded in
wine) are used in such quantities as to give flavour
and aroma to the sausage without masking the taste
of its meat.
The
mixture, after a night of seasoning, is made into
sausages using natural or artificial skins, tied
into pieces about 40-50 cm long and folded into a
horseshoe shape. The sausage is eaten as it is, if
cured or after cooking on a spit or on the barbecue,
if fresh. |
