Seasoned
ricotta is also produced by hand or industrially. It
is a dairy product made from the whey of cow's,
sheep's or goat's milk, due to the thermal
coagulation of whey proteins which is salted and
pressed.
It weighs
about 3 kg and is cylindrical in shape with a
diameter of about 20 cm and its height varies
between 10 and 15 cm. It has nearly no rind and the
cheese is white and compact in the fresh product and
brownish yellow in the more mature version. The hand
made smoked variety takes the name of “Ricotta
mustia”. |
