Ravioli
galluresi o “Pulilgioni” are pale squares of pasta
with a filling of fresh sheep's-milk ricotta. They
are common in the Gallura area and the bordering
territories where, especially in the past, they were
prepared in the spring when ricotta was produced. By
tradition, they are served in a tomato sauce. The
ingredients used to make Ravioli are: durum wheat
flour, eggs and water for the pasta; fresh sheep's
milk ricotta, eggs, parsley, orange or lemon rind,
salt and sugar for the filling. |
