Ravioli
di formaggio are square shaped and filled with a
mixture of pecorino cheese. The pasta is prepared
simply using flour, water and eggs, while the
filling is made of fresh grated pecorino. Ricotta
ravioli are made with durum wheat flour eggs and
water for the pasta; eggs, sheep's ricotta and
boiled beet greens for the filling.
Ravioli
are common all over the region and are served with
tomato sauce with pork or mutton and sprinkled with
