In
Sardinia, there are family run businesses which
produce sun-dried tomatoes with an ancient and
patient method. This is a completely natural product
which is dried under the sun adding only salt. Once
the tomatoes are dried, they are preserved in jars
lined with bay leaves.
There are
two varieties of sun-dried tomato: a saltier version
used for cooking and a sweeter version which can be
eaten as an appetiser |
