In the
Nurra, Alghero and Valledoria areas, different
varieties of tomato have always been grown.
Originating in America, the tomato has found its
ideal habitat in Sardinia. Among the many varieties,
the Camona is particularly important due to the
producers' orientation towards organic production.
It has small very sweet fruits. Tomatoes are also
dried in the sun with salt: the very salty version
is used in cooking while the milder version can be
eaten as an appetiser.
In
addition varieties such as the San Marzano tomato
are used in the industrial production of more widely
used products (passato and preserves) in Sardinia.
