Papassini
or “Pabassinas” are characteristic Sardinian
biscuits which can be found all over the island.
They are usually diamond shaped or long and covered
in icing on the top. In the past they were made in
the autumn months for the festival of All Saints.
They are eaten with sweet wine or moscato.
The
ingredients used to make Papassini are: eggs, flour,
sugar, yeast, sultanas, chopped and toasted walnuts
or almonds, toasted and ground aniseed. |
