Zichi
bread is a typical bread which is usually shaped
into reasonably thin flat circles and produced
either fresh or dried. Zichi bread is traditionally
produced in Bonorva, but also in Cheremule and
Cossoine.
It can be
used as bread to eat daily or in the preparation of
first courses ('pan 'a fittas'). The main
ingredients used to make Zichi bread are: re-milled
durum wheat flour, water, beer yeast and/or natural
yeast, salt. |
