In the
village of Olmedo, a few kilometres from Alghero,
different kinds of typical bread are made according
to the bread-making traditions of the island. The
names of these types of bread are: “Covazze”,
“Pane oltadu in telu”, “Pane russu”, “Pane
fine and ”Pane cuccu”.
A
particular characteristic of this bread is the
respect for ancient bread- making methods, which
range from the use of natural acidic yeast (“Madrighe”)
to cooking in a wood oven, not forgetting rigorous
manual kneading. |
