Pane con gerda o “Cozzula ‘e belda” (Bread
with lard), is a soft, quite squashed focaccia with
a rounded shape and it comes in various sizes.
The main ingredient used is the so-called “gerda” or
residue derived from the melting of pork fat during
the production of lard. Traditionally, this type of
bread was made during the butchering of the pigs
bred on family farms. The ingredients used to make
this bread are: “gerda”, durum wheat flour, salt,
beer yeast and, in the sweet version, sugar and
sultanas. |
