Carasau
is one of the most characteristic and famous
products of the Sardinian bread industry. It dates
from ancient times when it was necessary to make
bread which could last for a long time without going
stale. The traditional Carasau bread is in thin
circular sheets, cooked twice, although other shapes
and forms can be found.
It is
considered the ancient bread of shepherds and in its
preparation, a fragrant, crispy bread is obtained
with a particular aroma, high nutritional value and
great durability. It is also known as music bread
due to the sound it makes when it is broken. The
ingredients used to make Carasau are: re-milled
durum wheat flour, water, natural and/or beer yeast
and salt. |
