This is a
blue sheep's cheese. Cheeses of this type have
greenish veins in them produced by Penicillium
roqueforti moulds. The colour of the veins can range
from a more or less intense green to pale grey
depending on the strain of mould used. Weight is
2.5- 3 kg , the drum is cylindrical with flat top
and bottom and perfectly vertical sides. The cheese
is soft and white with green veins.
It has an
acidic and slightly sharp taste in the young cheese
and stronger and more decisive in the mature
product. |
