Another
variety of appetiser consists of sun-dried olives,
with salt. Usually the oil varieties like 'La Bosana'
are used for this. They are selected well ripe,
washed sprinkled with salt and dried in the sun
until the skin appears wrinkled. In this way, the
salt takes away the bitter taste from the olives
giving them a tantalising flavour.
This kind
of olive can be eaten as they are or served with
garlic, parsley and chili. |
