Olive
cultivation also dates from the Spanish domination
(15th Century). In fact harvesting techniques,
grafting and typical varieties of the island all
have Iberian origins. Sardinian extra-virgin olive
oil has quite an intense fruity bouquet; traditional
harvesting and pressing techniques exalt the
presence of poly-phenolic substances and
antioxidants which are naturally found in high
quantities in the local olives.
Olives
are cultivated in the areas of Sassari, Alghero,
Ittiri, Sorso and Sennori but also the areas of
Codrongianos, Florinas, Uri and Usini. |
