This is a
choice, light, tender and tasty product with a
colour that goes from pink to bright red when cut.
Its name derives from a family of carnivorous
mustelidae mammals (in latin mustela) which
are slim long bodied animals. It is made from the
sirloin of a mature adult pig, seasoned and cured
for a good 50 days.
It has a
sweet, slightly peppery flavour. In Sardinian
tradition, it can be eaten fresh or cured. It is
excellent fried or roasted when fresh while, when
cured, it is used as a refined, delicate starter. |
