Among the
many types of honey made in Sardinia, the most
famous and precious is from the strawberry tree (corbezzolo).
It is found all over the island and has a bitter
taste due to the presence of 'arbutina', a
polyphenolic compound typical of the shrub. The
arbutus flowers in the period from November to
March, thus limiting its chances to be used by bees.
Corbezzolo honey is a dark amber colour and has a
pungent odour.
In
cooking, it is particularly recommended with dairy
products such as melted pecorino cheese, or as an
accompaniment for sweet dishes such as seadas and
ricotta formagelle. |
