This is a
recently made cheese made by the San Pasquale di
Nulvi Cooperative. Some of its characteristics are
reminiscent of cow's milk cheeses such as Parmigiano
Reggiano or Grana Padano.
It is a
hard sheep's cheese which is matured for several
months. It is cylindrical with flat top and bottom,
weight varies from 20 to 35 kg. The dimensions of
these surfaces are about 33-36 cm and it is 16 to
20 cm in height. The rind varies in colour from
straw to brown. The cheese is straw white with rare,
minute holes; doughy in its youngest form and hard
when mature. |
