Fregola
sarda is a type of pasta made of durum wheat and
water, composed of more or less regular fragments,
which, after natural drying and tasting, are golden
in colour. The name of this particular pasta derives
from the latin “fricare” which means to
crumble, the word Fregola thus means small fragment.
Fregola
sarda, which is available nearly everywhere on the
island nowadays, is an excellent accompaniment for
cockles and other seafoods and with mutton based
sauces. The ingredients used for making Fregola are:
