Formaggelle, “Casadinas” or “Pardulas”
are traditional Sardinian cakes prepared at Easter
and Christmas.
They are
round discs of pastry, pinched round the edges and
filled with fresh pecorino or ricotta. The
ingredients used to make Formaggelle are: flour,
water, salt and lard for the pastry; fresh pecorino
cheese, sugar, eggs, grated orange and lemon peel
for the filling. In the ricotta version, sultanas,
sugar, eggs and lemon peel are used. |
