Fiore
Sardo is the classic cheese produced in Sardinia.
Its production is linked to work of single shepherds
who use whole raw milk from their own herds. It is a
raw, hard and savoury cheese.
It is of
a white colour and is slightly holey; when more
mature, it becomes crumbly and grainy. The rind is
very thick and dark in colour, the sides have the
characteristic shape of a mules back. It is a PDO
cheese (protected designation of origin) and can
only be produced in Sardinia following strict
methods. The rennet used is a lamb or goat paste
which gives the cheese a markedly strong flavour.
