Zuppa di pesce
The most representative are the Zuppa Catalana
from
Alghero
and the Zuppa Castellanese from Castelsardo.
As well as curiosities from the inland areas,
Sardinia is rich in products from the coastal areas.
It is from a variegated mixture of fish that these
rich soups are made and they can be tasted on the
coast.
The recipe differs enormously from area to area but
they are all based on a large variety of so-called
“soup fish”.
