Lamb's
trotters
A
typical dish from the Sassari area which consists of
lambs feet in a vinegar based sauce. The long and
laborious process includes cleaning, washing and
boiling the feet in salted water.
Then olive oil, garlic, chili, parsley and tomatoes
are fried together and the feet are added with the
vinegar.
In the past, these were eaten in company while
talking.
