Boiled mutton
A
typical dish which originates from a way of
consuming animals at the end of their productive
cycle.
Boiled
mutton is another symbol of Sardinian cookery. It is
the food most commonly found in village festivals.
It is
prepared by boiling mutton with mixed vegetables
such as onions, potatoes, carrots, tomatoes etc. As
well as the characteristically flavoured boiled
meat, an excellent broth is produced which can be
used for cooking Gnocchetti which are then flavoured
with Traditional Sardinian cheeses (Pecorino Sardo
or Romano)
