Oven baked aubergines
These
are so popular in the Sassari area, that they have
even inspired a song about their goodness.
They are quite easy to prepare: the aubergines are
cut in half lengthwise and scored across the pulp to
form diamond shapes, they are then covered in
garlic, parsley and plenty of olive oil and chili
and either cooked in the oven or, for more expert
cooks, on the barbecue.
