Gnocchetti
This is probably the most widespread pasta course in
Sardinia
and has many other names in dialect (Malloreddus,
Cigioni etc.) Gnocchetti are available as fresh
or dried pasta in various shapes, more or less long
and more or less round. They are typically
accompanied by a tomato sauce made with pork or wild
boar known in the Sassari dialect as “Ghisato”;
in the past this dish served as a pasta sauce and
also a second course with the meat sauce being eaten
again separately. |
