Favata
A typical dish from the Sassari area made with
broad
beans and meat. It was traditionally prepared in the
winter months when the pigs were slaughtered.
It is a kind of richly seasoned soup with the
addition of parts of the pig like the leg or the
head.
Favata has an extremely aromatic flavour due
to the addition of wild fennel, sun-dried tomatoes
and cabbage and is served in a bowl over dried
bread.
