Leaf cabbage
Another
typical vegetable in the Sassari area is
the
leaf cabbage with which a soup is made using
‘cotechino’ (a spicy sausage), lard and sausage, a
variation on the Favata with potatoes in place of
the broad beans.
When it
is nearly ready, short pasta is added which absorbs
its flavour during cooking.
