Horse and donkey meat

Horse meat is habitually eaten in the Sassari area. A horse is usually eaten as an adult whereas donkeys are usually young when butchered.

Both meats are usually marinaded in olive oil with garlic, parsley and chili and cooked on a barbecue like any other steak.
