Artichokes
Artichokes are are products which are cultivated in
great
quantities
and are especially high quality in the valley of the
Coghinas and near Uri and Ittiri.
They are often eaten raw dipped in ‘pinzimonio’
(oil, salt and pepper), or cooked with garlic and
parsley; they are also an excellent ingredient in a
lamb stew.
The wild edible thistle is another particular
vegetable, once freed of its nasty thorns, it is
peeled and dipped in ‘pinzimonio’ as an excellent
starter. |
