Lobster alla Castellanese
Lobster
alla Castellanese is a typical dish from
the
town of Castelsardo.
It is
slightly more elaborate than Lobster alla Catalana.
The
crustacean is boiled and dressed with a sauce made
from tomatoes, browned garlic, chili, parsley, lemon
juice, oil and the eggs and grey matter from the
head of the same lobster.
