Eel
The eel
which lives in fresh or brackish waters, (remember
that in Sardinia they can be found in 15,000
lagoons), represents the most well-known fish
together with the mullet to be found away from the
coast.
The
most common recipe is grilled eel, barbecued after
marinading or more simply dressed with a little
olive oil after cooking. The widespread popularity
of this dish is witnessed by the typical aroma of
barbecued eels at the most important festivity in
Sardinia, “La Cavalcata Sarda” held in Sassari in
the month of May.
